the 120mm tank HE has like 4.2kg explosive so it will probably have around 39-40mm pen ingame i dont have any info for the HE filler of the mortar shell
MOD 300 indeed has 4.2kg of explosive filler, MOD 308 on there other hand though has only 2.85kg of explosive filler. MOD 300 also offers superior ballistics as it is an conventional cannon round while MOD 308 is a mortar round. It is an interesting concept to fire both cannon and mortar rounds from the same cannon. In theory Mortar-Gun could use conventional HEAT rounds such as MOD 310 HEAT-MP.
In-game MOD 308 could be the standard round while MOD 300 as researchable option, even maybe proximity fused MOD 300 could be added to its arsenal.

The Sabra Mk.3 was created around the same time as the Mk.2, it was likely an alternate option to be chosen if the Mk.2 wasn’t enough. However it appears the Mk.2 was chosen over the Mk.3.
The Sabra Mk.2 and M60T feature a number of differences, namely the M60T uses the hella old M60 commander cupola with the .50 cal, while also removing the extra roof armor the Sabra Mk.2 adds. There’s some other changes on top of that, just can’t remember them off the top of my head.
