its just the best plane weapon wise with at least some flight performance left but even then its pretty mid for 5.0 to say the least

If you can hit shots, the 50mm 262 can be a monster (but that requires you to be a monster with your aim), and I personally love heavy fighters like the 210 and 410, although they are not that great for pure performance
I would say the Do 335 B-2. Airspawn, fast, 3x MK 103 with plenty of ammo. I didn’t tested these cannons against the new bomber damage models, but at this rank it’s the best cannon.
Using a plane to ram into bombers isn’t exactly the best tactic, the best you’re going to get is a damaged engine perhaps a broken propeller:
One of the low br DO217 interceptors, they got the bomber buff too so the low tier bombers have a hard time killing them
From my pov your best chances in a “German” plane would be the captured premium P-47 at least if you look at the whole picture.
This recommendation comes mainly due to the fact that the bomber damage buff is centered around a very high damage resistance vs HE shells (a former strength of German mine shells) and most of the kills i witnessed were the result of (multiple) fires and pilot snipes. The US 0.50 cals excel exactly here, whilst the low BR prevents you from facing really challenging stuff like G8N1s and lower BR bombers with deadly 20 mm turrets (like Pe-8s, Yer-2s, some JP bombers) can be attacked with little to zero risk if you know how.
But:

If i see your question i am not sure if you have realized that bomber hunting became one of the most difficult tasks at prop BRs in Air RB - a task that requires a lot of skill to execute and to survive whilst the risk is way higher than the actual benefit.

It boils down that you should have way more than a capable aircraft - you need also more than just a rough idea about recommended attack tactics, weak spots of bombers, potential dead zones of defensive turrets and also the right ammunition and, ofc, of increasing threats as soon as bombers carry 20mm turrets.

I remembered you name from this recommendation i gave you a few months ago. And at this point in time you were rather new, mainly a Ground RB main and based on the impression at this time i would strongly recommend you to stay away from bomber hunting aspirations as from my pov you won’t get happy with this task.

I flew since the update (as of today) exactly 30 matches with an 80% WR and 55:2 kills - all of them in US planes (GB/USA). I would like to point out that my 2 deaths were classic skill issues as i pancaked with a P-47 on patch day (whilst strafing/killing the most dangerous enemy on his runway) and collided today with the carcass of of dead plane.

Just 4 of these kills were actually bombers (3 Pe-3s, one G5N) and just one of them was an instant kill (80° dive on Pe-3, pilot snipe). All others were delayed B-kills after setting fires and/or damaging engines. On top of that around a dozen assists and at least the same amount of bombers which managed to survive multiple fires or otherwise significant battle damage.
But these bombers were targets of opportunity - so they presented themselves in unfavorable conditions whilst i focused on the real threat which are enemy fighters.
Based on my analysis of these matches (i play Air RB more like chess and watched basically all replays) the best planes for bomber hunting are US planes with 0.50 cals up to 5.0 / 5.3 (then becomes fighter opposition real tough) - and your goal should be to play around them until they are the last enemies alive.
Fw-190 F8 if you can have tone of fun with the X-4 missiles or have the option to mount 2 30mm plus you get an air spawn.
I’ve been flying the Fw 190 A-8, and its performance against bombers is a bit of a mixed bag. Its four 20mm cannons deal decent damage, but you often won’t manage to shoot a bomber down even after expending all your ammo—though sometimes the damage you inflict causes them to crash when they try to land. The problem with this Fw (and I haven’t flown other variants in years) is that its maneuverability is actually worse than a bomber’s; if you attack from below and the bomber makes a sudden move, you can’t get a shot off because the elevator response is terrible—to the point where pulling up the nose kills your speed and leaves you stalling in mid-air.
If you get good with the F-8 you can use the X-4 missiles to good effect against bombers. They’re difficult to use though. Alternatively you could try the big single shot rockets on other Fw190s, I’m not really sure how well they work now though. Anything with 2 engines that also got the bomber buff and has decent guns (30mm is probably the best for Germany rn, no .50 cals to super shred the bombers with) will work well to kill bombers.
