I have made games with both UE 4 and 5. Unreal engine performs extremely poorly when it comes to complex physics simulation which is not good for a game like War Thunder. Also the overall performance of UE isn’t good, most games doesn’t run on low end systems.
Proprietary game engines such as Dagor is always good for a game like WT. It allows far more flexibility and freedom.

I guess the freezing screen has nothing to do with gpu or game optimization but momentaneous freeze detected stuffs caused by something between the server and the client.
Unreal is an overrated engine as it is. UE5 games run like trash and by the time they actually get them sorted, UE6 will release and restart the issue.
It will be even worse than UE 5. They’re adding built in AI code and asset generator

My man… you can’t blindly blame game engines.
Unreal Engine 5/6 [whatever we’re on] is still “based on” Unreal Engine 1.
Dagor 6.5 is as different from Dagor 1 as UE5/6 is from UE1.
Dagor is already optimized.
As for server disconnects: Hanlon’s Razor: Server did its restart and/or crashed while a match was going on.
Instability: Server is within 20 minutes of restarting & the timers for server uptime should probably be reduced.
Nothing to do with game engine.
Not going to read everything else yet, but I’m willing to bet not a single thing here is a specific issue with the Engine itself.

ace combat 8 online trailer dropped like 2 days ago and it already looks so much more fun.
With framerate drops because of UE5.
You know very well what a frame rate drop is when you play war thunder, dont you? lol
Yesterday someone dropped a napal in a ground battle and my PC took 2 sec to back to normal
Given UE5’s track record of running like hot garbage on ps5 - and pc - and Warthunder rarely framerate dropping in general, I am inclined to believe UE5 is the issue.
Only time will tell if Ace 8 runs like arse or not but given pc will also almost 100% likely also have denuvo, which is often a 1-2 punch to ‘you’re not getting above 45 fps average on even a beefy rig’.

My biggest complaint - personally - about Ace 8 is locking Ace 0 behind preorder.
