Why is the F-16CM PoBIT’s initial missile the AIM-120C5, while the F-15C Golden Eagle and F-18E both have AIM-120D? In my opinion, among these three planes in 14.3, the F-16 suffers the most.

well factually if we wanna be correct every ARH only has 1-way-DL since after DL is broken there is no-way to reconnect (only missiles which can do this are the SARH missiles with DL), and the decreased IOG drift is usefull imo. And missiles will prioritize their seeker over DL at every step of guidance.
Plus from my experience the 120D and PL-12A have a way better time when being datalinked against notching targets thanks to their GNSS whatever bullshit
