I myself have control issues but this is actually worse than mine.

Have you tried it in RB to see if it does the same and that it’s mouse-flight overall being the issue?

Also have you changed, or even tried changing your instructor settings?

I’d check you haven’t put on relative control or something in the axis setup… Have you modified the controls in these areas at all?

Relative control is off. And the problem is observed only on late jet fighters. There are no such problems on the Hunter F.1. But on the Scimitar F Mk.1 it is even worse…

This issue has been long present in the game (blocked rudder?) - in my experience, apart from mig21 the most exaggerated version of it can be experienced in F14s - I even got used to use the ruddder manually so it doesn’t stop at this stupid angle during turning. In Arcade many times manual usage of the abovementioned rudder is not fast enough to win some speedy encounters. I would love to have it resolved.

And this sharpness indicates that the rudder power is quite sufficient at this speed.

The error is also reproduced at speeds of 400-500 km / h.

The error can also be reproduced from the keyboard. To do this, you need to pull the plane to the side by yaw at approximately the same angle as in the video above - the result will be the same (the steering wheel will freeze in the turned position and after a second and a half it will die out and the plane will abruptly return to its original position).
The freezing of the steering wheel can be reset prematurely by pressing yaw in the opposite direction from the keyboard.
