On the USS Forestal, if you can set fire to the turrets, then pretty much any size bomb or missile is enough. Ive sunk one before with a pair of 500lb Paveway IVs.
If you are talking about just slamming bombs into it, then its more about spreading the damage to kill the crew. Ive sunk them before with a single pass in a Buc S2, dropping the full 16x 1000lb bombs down the deck
You can also try hitting the waterline, and doing flooding damage but they repair too fast to be an overall effective method, it also exposes you to the SPAA quite heavily imo
Others like HMS Ark Royal, Im not sure, probably best to dump down the deck
