You talk about “facing 2003 aircraft” like it is a new thing, when truth is, we already do and have done since September last year.
The F-16C we have in game is a block 50 CCIP, which added features like HMD. The CCIP upgrade was done in 2003.
Of course neither the F-16 or Su-27 are new designs from 2003, they are merely upgrades on an older airframe. It’s not as big of a deal as you make it out to be.

IIRC The MLU had to get an updated MMC to use AMRAAM
The Q-5L was a 2005 aircraft. At the time it was introduced, there are barely any planes in the game that surpasses 1980s.
Edit: By La Royale China have occupied 4 out of the top 5 latest aircrafts in war thunder. The order are: Q-5L(05), F-16A MLU(03), J-8F(03), JA37D(98), J-8B(88)
