Yeah, the US operated the C.2 and C.1 as part of their aggressors teams, they were pretty useful simulating high accelerating aircraft.

I am mostly invested in the correct modeling of the WDNS on the C.7 as well as other avionics

I can see naval aviator has HGU-55P helmet but not sure IDF also had it in late 1980s.
Just realized I never replied to this, what I seem to understand is that the Kfir Canard / Gderot / C.1 had these very issues of poor instantaneous AOA as well as turn rate due to the added weight of the J79 powerplant put into the fuselage, as well as the general enlargements done to the fuselage to conform around the engine.
Therefore its performance is worse than the Mirage III / Mirage V, though compensating on the integrated payloads, faster speeds, and overall satisfaction of Israeli officials by ditching the unreliable and poorly performing Snecma Atar engine to their taste.
These AOA and turn problems would later be resolved by the upgrades to the engine plant (yes, the engine on the Kfir gets better with every version, something not modeled in game) as well as the addition of the bigger canards seen on the C.2 and onward variants.
Iirc these engine upgrades are slight modifications done by the Israeli Air Force to make it more efficient and less prone to failure, and (I might be pulling this one out of my ass) I THINK they managed to add around 500kgf of thrust at one point, though I am not entirely sure.
The Kfir is supposed to get slight tweaks to the J79 powerplant even in the C.10 variant as reported multiple times by the Colombian news coverage and statements from official FAC (Colombian Air Force [Spanish abbreviation]) personnel.
You might recall that quote I presented earlier of “After putting the aircraft through total re-engineering…” where the solving of engine problems had been addressed, these problems which had caused various Kfir units to crash on Colombian soil.
TL;DR: Want great performance? Play the C.2 or C.7, the C.1 isn’t as great as one may expect. It’s a great base-bomber and dogfighter in simulator battles, not so much in realistic
