Even then, you just don’t turn with them. You disengage, it’s honestly how I fought a BF-109, I didn’t play their game, and they refused to play mine. So neither of us got shot down. The match ended in a draw, literally.
That’s how one should go about everything. Don’t play your opponent’s strongs. And if you can’t force your own play, disengage.
I don’t think this is as much of a 'plane is op issue ’ ,but more of a way arb is structured. Game mode doesn’t really treat high altitude fighters well

A BF-109 G-2 are Altitude fighters/Energy Fighters.
That is not at all comparable.
if you tried having a Spitfire fight a P-47 D28, it would lose. If it attempts a turn fight.
That’s also because the N1K in real life is nowhere comparable to what it is in game which in game is a heavily nerfed version of its real-life counterpart. Let’s not forget that the in-game counter is still missing some of its actual thrust.
