How can I view my kill count in Air Sim, showing only real players and not AI aircraft?
Also, I remember seeing a website that provided detailed stats about kill ratios, etc. Is that still available?

Do you mean your total stats or in a match? Because in a match you would see that on the leader board and total it should be on your profile tho I don’t know if that distinguishes Ai aircraft
No, sadly stats never distinguish between AI and player targets. = (

Yeah, I also wish the whole stats would be completely revamped. So much info is not shown, and would also be nice if it could be exported somehow.
You can get an idea of the total number of AI killed but not the number per game/plane on this site StatShark - See All Player, Missile, and Vehicle Statistics
For exemple, I have killed around 518 AI among the 1558 air targerts I’ve destroyed
