TLDR (because I tend to yap), it’s too soon for IIR missiles and Gaijin likes to add things across the board and not leave it to one nation only (F-14A being the exception for obvious reasons). Give it ~3 more updates (end of year at the latest, if not early '27) and they should be here, likely limited to current and/or future ~14.7+ aircraft.
(We like to incrementally increase the suffering by limiting which BR range has what technology/capability)

Anyways, it’d be logical to leave out Eurofighters and Rafales until 5th gens arrive, that would 100% be heavily in their favor until 5th Gens arrive

The EFT and RFL are obviously better at dictating the terms of an engagement than things like the F-16CM/V, Superhornet, J10, Gripen. Missiles like the AIM-9X, PL-10, R-74M, are better used in WVR engagements. Thats still likely in the Eurocanards favor, and giving them things like the MICA IR and IRIS-T nullifies even that
No one seems to get it right when it come about next-generation missiles, such as the AIM-9X, Iris-T and MICA-IR, these missiles can withstand enough G-forces and AoA to end any dogfight. The next generation of IR missiles will finally force players to use positioning, because dogfights are a death sentence.
Yeah just look at dcs with the 9x there. Instant violation of the aircrafts structural integrity if a 9x is fired, 90% of the time.
If the ECM from earlier on in the B-52 event was any indication, I think they’ll initially use the current implementation (IIRC it’s a merger of the two types of IRCCMs?) and work on it later.

Artificially holding back Eurofighters and Rafales (you can throw the Su-30SM2 in there too) after they’re already in-game makes about as much sense as telling everyone else they should have waited for equivalent aircraft before getting MRAAMs, IRCCM missiles, ESA radars or any other capability advantage.
If we accept the logic that Eurofighters and Rafales should be held back until 5th gens arrive because they’re currently better at dictating engagements (a highly subjective claim in itself…), then where does that stop? Do we tell the F-35, Su-57 and J-20 they can’t have their stealth characteristics until 6th generation aircraft arrive?
If new technology is ready to enter the game, it should enter the game. The solution isn’t to permanently handicap a handful of aircraft until everyone else catches up.

Just one… slight problem. We know next to nothing about it. The best we can hope for (for now) is AIM-120D-3 or AIM-174B for USA

Well, su57 is roughly as stealthy as a Rafale, they are both reduced cross section fighters. Not stealth. Well the russians claim the su57 is stealth…
And even if it were stealth… it doesn’t matter the top tier in War Thunder is all about AESA radars on 100km x 100km maps they can detect any stealth aircraft as soon as it spawns . No aircraft is invisible they never have been they are just difficult to detect
