The 5.1 setting is the first thing I would change when using ordinary stereo headphones. If the game outputs surround channels to a two-channel device, Windows or the headset software may downmix them badly, which can remove bass and make guns sound distant or metallic.
Set both War Thunder and the Windows playback device to Stereo/2-channel, then temporarily disable Windows Spatial Sound, audio enhancements, virtual surround and any headset EQ. Restart the game after changing the channel layout. Also verify that Windows has not switched to a low-quality hands-free/Bluetooth profile. If the problem remains, compare another wired/USB output and attach a .clog plus the exact headset and audio-driver/software names. That will separate a game mix issue from an operating-system or headset-processing problem.
