So there are a lot of times when I play 4.0-6.0 SPAAs (the WW2 and the ones with guns. not missiles) and some dumb plane thinks “ooh a nice juicy open-top tank I hope it doesn’t shoot me” and starts a head-on to strafe me. In this case I just shoot at the nose of the plane, and it works most of the time. But what are some more critical areas I can aim so that I can kill the plane before they drop a bomb or kill my crew? Do I try to pilot snipe?
Well if you’re good with the guns, shooting at the wings might work as they’ll lose control and the bomb might not land near you.
Is it a good idea to shoot at the bomb if he has one? (Killed a Bf 109 in a Sherman by strafing his bomb)
I think it is not a bad idea but many times planes have more bombs so although you might shoot one of them they’ll drop the other one.
The nose. Unfortunately their is no place you can really hit to ensure they will not hit you with a bomb. Especially as an open top with overpressure- if it lands within 10 meters of you, you are dead. Just hit the nose and take the kill knowing that it comes with a side of death.
A majority of this issue is the fact that pilots have control after losing their whole aircraft and technically ‘dying’. Technically speaking if they removed this “life after death” feature, it also wouldn’t be an issue, but A. I doubt they will do that and B. I don’t really want them to do that.

I got killed by a weird derp plane after I snapped the wings, burned the engine, and ripped the tail off. He spun above me, dropping a small present for me as a reward for killing him.
Long as pilot is living, that plane is threat.
So many times killed AA who shot me to , just by managing to cannon it or drop bombs on it after being on fire and missing wing… :D
