Do we get them on a weekly base or?
Intermittently between majors. They are not to be expected on a frequent or consistent basis. But will help keep things rolling between majors when we have something we can show. Without spoiling the “bigger” things of the update too.
Standard dev blog seasons will roll as always closer to the majors. WIP blogs will come as and when

Will these posts be only about vehicle additions or could we see some showing off some QoL improvements / new features or new weapon systems being worked on?
Also will they all be related to the next upcoming updates or could we see some longer planned stuff shown off too? Like something planned to come at some point in the year?

Generally vehicles, as they can be shown in a more WIP state. Features and new improvements mostly need to be closer to a final state to be shown, so these will mostly still come in the CM updates and blogs. But never say never.
It wont be that far ahead. Models for next year would typically not be in progres now from a 3D modelling point of view.

Why is it mentioned that the model is being made from scratch, as if war thunder doesn’t make their models from scratch? Do you guys just buy almost all your models?
I think it just means they are not reusing a Sabre model and touching it up a bit but making it fully unique and new Flight model
