Is there a FAQ to avoid the same questions for a person brand new to WT?

I’m coming from IL-2 and DCS, looking for something a “bit” less intensive, but (likely) only flight and only in Simulator mode (no neon signs for me). I find the controls setup confusing at best, for many things it requires an axis (like trim), the throttle (I have a TM Warthog HOTAS) looks perfect in setup (runs the full bar) but in the game it is all over the place, increasing/decreasing by itself . And the plane flight model, they feel like i’m flying a boat, swings and sways, almost like there is a delay in inputs and the plane is under water. I have L-45 rear and R-45R views on my hat, but see no way to set R-90/L-90/UP-45? FR is 200+ (i9 13700 and 4090), so it looks great though! Have a lot more questions, maybe point me somewhere?
