this change has completely fucked up the way i play the game, i used to hold S while pressing W every now and then to turn without g-loc’ing at high speed and without having to freelook while still being able to look around
this doesn’t work anymore, and i can’t find a way to disable this

You can’t.
You will simply have to change the way you play or change your key binds.

this significantly lowers my situational awareness for literally no reason
nevermind, found a workaround using external software.
I HIGHLY recommend NOT doing that. Depending on what that software is there is a risk of the anti cheat seeing it as something malicious and you getting banned.

respectfully, both the old and new anticheats didn’t do jack shit ever
what i’m most curious about here, is why was this game mechanic fine for nearly 15 years but suddenly it needs to change for the worse?
Going into an argument with a Game master prolly not a good idea ngl.
I recommend looking through the cheater ban waves posted every month here on the forum. There aren’t nearly as many cheaters as people think there are, a majority of the time it’s just someone who doesn’t know a game mechanic or tactic yet or simply just assumed cheats when there were no foul play involved at all.
Here are all the “Fair play” posts listed in order of newest to oldest:

No idea sadly, and your “worse” might be someone else’s better.
this is a conversation, not an argument
i don’t know man, as i said, i’ve literally never seen anyone complain about the way it used to work
if it were up to me it’d be a toggle to use the old or new system but we all know changes are never reverted or altered once added
I mean, not any different than arguing with any other player :)
I (or any other team-member) will NEVER do anything to any account that hasn’t broken the rules.
Making it a toggle might increase complexity a fair bit since there are so many key binds that will have to be able to interact in two different ways. I’m all for giving players more choices, but in this case it would likely also create more places for issues/bugs to occur. So both positive and negative things about such a change.
I should also clarify since i see that you are relatively new in posting on the forum, Game Masters have no insight into development, no influence over the developer choices and no contact with the developers, we handle in-game chat and name bans.

“toggle” doesn’t mean “toggle keybind”
I know. My statement still stands. A toggle would still mean that every key bind would have to have two different ways to interact with every other key bind. One interaction with the toggle on and one interaction with the toggle off.
I just now had a thought, are you able to “double bind” the pitch down to add “S+W” as a key bind for that direction in addition to the “W” bind?
I don’t know if that works but it might be worth a try.
Probably using a virtualized/digital axis, which is regularly used by people to harmonize multiple control inputs (e.g.: combine rudder pedals with a xbox controller to look like a single controller and then bind that single controller in Warthunder).
all of what you described isn’t actually even necessary, warthunder supports multi-gamepad input by default already. game takes inputs from my mouse, keyboard, throttle, stick, and rudders which are all their own separate “controllers”
