There are many members of the Su-27/30 family that could come to the game at this moment, such as the Su-30M2, Su-27M, Su-30MKK, etc… I am curious as to what other people think and what you want.
I’ll go first:
The Su-27M, specifically the T-10M-1 with potentially the M-scan N011 radar set; would be an avionics downgrade but would have larger tail control surfaces, more fuel, canards 🤤, and a better radar.
I’d really like to see the 27K/33 and J-15, the extra pair of pylons and ground ordnance would be nice, as well as the neat looking canards.
I would have absolutely loved the Su-33 last update but now I feel it would be strictly for novelty and would be dead on arrival. Though in WT the high AOA handling with canards in a dogfight would be kinda nice.

I don’t see SPO-15 antennas on air intakes, and see something like antennas on leading edge of the wing ,doesn’t it has L-150?
I believe it would indeed have the SPO-32 (L-150), though there is not that much information on it. I know for a fact it does not have the old RWR versions due to the cockpit:

Honestly we should already have gotten the Su-30MKK instead of the J-11A (Early) since it uses essentially the same systems as the Su-27SM
SPO-15 can be displayed on MFD.

I don’t see antennas, so i think it isn’t SPO-15.
Su-33, Su-30SM.
Both have their BRs in the game [13.7] until F-15C MSIP II is brought up to 14.0, then they can go there.
Yeah it’s quite unfortunate, but there’s always hope for more decompression in the future even if unlikely
J-15 would probably be viable at least, since it has PL-12s and a better radar afaik.
It is a bit too advanced
I would 100% say the Su-30SM2 is much too advanced for the F-15C to face, as it has an Irbis-E Hybrid E-Scan radar set
I’d say the Su-30M2 (N001VEP) is the most likely Su-30 and the Su-27M (N011 M-SCAN) is the most likely Su-27

SM2 only has PESA over SM though for War Thunder “balancing”.
Granted, double the missile load of Rafale F1.
The SM2 has an Irbis-E AESA/PESA hybrid and the SM has the N011M BARS-R PESA
But the M10 is a new built Su27M, M1 is mods based on originally existing Su27, are they still similar enough?

As well it has larger vertical stabilizers meaning more rudder authority.
