I was wondering if I keep my Specials task that I did and my Special Task purschase coupon after an update?

You can purchase a special task after you make a medium daily objective. And that stay during all the time to the next battle pass (for this battle pass, it to 23th october) or if you purchase it with warbond. Make a special task give 5 points for level progress on a level of the battlepass.

I know that but if i finished one, does I keep it all time even after an new BP ?

Nope, that finished with the current battlepass and you can unlock new missions with the new BP.
