What is DeMarre, and how does it affect the shells exactly?
It’s a formula Gajin uses to calculate penetration of rounds in-game using caliber, mass, and velocity. There are some other factors to it in the code that are hidden. For SAP rounds, there is normally a modifier that reduces performance.
An unaware Pz.IV could be in front of you, and you would be powerless.

Sturmmörser has 0° of depression
Sturmmörser has both: a lower mount for the “cannon” and a slow shell, which means it can actually aim a little downwards
