Dutch pilot Bram van der Stok would be cool too. Fought the Germans with a Fokker D.XXI during their invasion of the Netherlands, made a few attempts to escape to the UK. He finally succeeded in '41 and trained on a Spitfire in the RAF. He was also one of three successful escapees from Stalag Luft III

Another good one is Raymundo da Costa Canário who fought in Italy with the Brazillian Air Force.
7 days after the first mission he hit a chimney while bombing Tigers in northern Italy, the P-47 lost almost the entire right wing. He was then misidentified as an enemy by Spitfires from the Mediterranean Allied Air Forces who then shot at him, damanging his tail. He landed Safely in an airfield in Pisa and flew 50 more missions.

I originally had planned on also asking for Military animals but I left them out of this post since every time I’ve asked I’ve never gotten an answer. Mainly animals like BAMSE, Wojtek, Unsinkable Sam and such
