It becomes mushy when it’s over-ripe. I don’t know anyone in their sane mind who eats over-ripped bananas. But any category between 1->3 is good to go, 4->5 no.
I would sell my soul for that

I mean 3 and 4 works well for Banana bread. 5 doesn’t work for anything.

5 is what you use for the best banana bread brother, and hoenstly you’d want the 6, the goo makes the bread sweet

If you want something extremely sweet and gastral problems then sure overipped bananas all the way.

Here in Murica, i am squeezing the goop out the brown banana peel into the dough, as one would correctly and properly do it.
Facepalm Mate, the overspending Banana is the problem. When they become over-ripened it means everything is breaking down into sugar. In which you’re gonna just add even more sugar to the recipe anyway.

Banana flavored sugar, which, makes the bread taste more like bananas… you can forgo the additional sugar as you wouldn’t need it when they’re this ripe!
