I would also think that the 30 minutes claim can only happen with a full and skilled maintenance crew, and in practice they take more time

Yes and no. It should be multi-color when it comes to different objectives, way points and IFF (though, everything ally is green iirc).
Whats even funnier (but probly wont come to game), it should be able to project a small accurate 3D image of the 360 environment too.

Yes, it can also target hostiles with information gathered from the RWR, both airborne and surface to air, although it wouldn’t be done from the RWR display. RWR contacts would also show up on the tactical/radar display which is where you can target them.

No, modern aircrafts use what is called a tactical display rather than radar display which only shows the radar’s FOV.
Tactical displays show what’s in front and also surrounding the aircrafts to its sides and rear. The tactical display shows information from datalink, radar contacts, IRST, RWR, IFF, etc. So it is possible to shoot at targets outside of any of the sensors’ FOV, for example when shooting at a target using datalinked information.
Modern aircrafts in-game should have the third person radar display replaced with a tactical display instead.
